Once that is done, the font will take care of itself. If for some reason you don't like the style of the one which appears, you just select the text and change it in the font menu of the app. Also you should make sure that in system prefs/language & region you have Chinese higher up on the list than Japanese (if both are present). Otherwise you may get Japanese versions of some Han characters instead of Chinese versions.
